Wayanad is Kerala's highland coffee and spice district, part of the Western Ghats, with our farms sitting between 700m and 1100m MSL. It's one of India's principal Robusta-growing belts — the altitude, red laterite soil, and shade canopy of the Ghats are what give Wayanad-grown coffee, pepper and cardamom their depth.
Every sack starts on a family farm or smallholding across the Nadavayal, Panamaram, Kalpetta and Sultan Bathery belts — farmers who've worked these hillsides for generations, picking selectively and drying in small batches they watch and turn by hand. That patience is what makes a clean, uniform lot instead of a mixed one.
Robusta is typically sun-dried as whole cherry on raised beds until it reaches export moisture, then milled to remove the dried husk and reveal the green bean — what the trade calls Cherry or Parchment processing, depending on whether it's dried whole or pulped first. Pepper and cardamom follow their own curing and garbling steps, shown below.
